Ingredients :

  • Medium Protein Wheat Flour 150gr
  • Naarden Bakers Cocoa Powder 15gr
  • Baking Soda 5gr
  • Arla Unsalted Butter 80gr
  • Veliche Chocolate Cover 64% 80gr
  • Eggs 150gr
  • Oldenburger Whipping Cream 40gr
  • Veliche Dark Chocolate Cover 52% 60gr
  • Selma Dried Cranberries (Chopped) 50gr
  •  Liquid Milk 100mL
  • Sugar 120gr

How to Make :

  • In a bowl, combine dry ingredients (wheat flour, Naarden Cocoa Powder and baking soda).
  • Cut Dark Chocolate Couverture into small pieces, mix with butter. Heat briefly over low heat until some of the chocolate has melted. Turn off the heat, continue to stir the chocolate and butter until completely melted.
  • Beat the eggs and sugar using a mixer or whisk until the sugar is dissolved, add the melted chocolate and butter mixture, beat until smooth.
  • Enter the mixture of flour, cocoa powder and baking soda gradually by sifting. Stir well.
  • Enter the liquid milk, stir until smooth.
  • Put the dough into a cake mold 1/2 part then fill it with 20 gr ganache center then pour the rest of the dough and fill it up to 3/4 of the height of the mold, oven at 175ºC for 18 minutes.
  • Cake block is ready to be served.

How to Make Ganache Centre :

  • Mix Veliche Dark Chocolate Couverture 52% and Oldenburger Whipping Cream 40gr until melted in the microwave, then freeze for 1-2 hours until frozen.
