Raisin Oatmeal Ginger Cookies

90 gr Ginger  (peeled then grated)

365 gr Bunge Flexibetter 3020 (bulk)

180 gr Brown sugar

270 gr granulated sugar

4 grams Cinamon powder

3 g Ginger powder

3 grams Salt

80 gr Eggs

45 gr Fresh milk

12 gr Vanilla extract

5 gr Baking soda

4 gr Baking pwd

550 gr Low protein flour

240 gr Oatmeal

270 gr Dried cranberries

Mix the flexibetter, granulated sugar, brown sugar, and salt until well blended, but not creamy. Then add the eggs and mix well.

Mix all the dry ingredients, then add them to the butter mixture and stir well. Finally, add the fresh milk.

Let the dough rest in the refrigerator for 1 hour until it hardens slightly.

Weigh out 20 grams of dough, roll it into a ball, then bake at 160 degrees for about 15 minutes until cooked.
