INGREDIENTS

 

90 g Ginger (peeled and grated)

365 g Bunge FlexiBetter 3020 (bulk)

180 g brown sugar

270 g granulated sugar

4 g ground cinnamon

3 g ground ginger

3 g salt

80 g egg

45 g fresh milk

12 g vanilla extract

5 g baking soda

4 g baking powder

550 g low-protein flour

240 g oatmeal

270 g dried cranberries

 

HOW TO MAKE

Processing Fat & Sugar: Beat the Bunge FlexiBetter 3020, granulated sugar, brown sugar, and salt until well combined. There's no need to beat until very fluffy (creamy). Then, add the eggs and mix until well combined.

Mixing the Dry Ingredients: Combine all the dry ingredients (flour, oatmeal, spices, baking powder, and dried fruit), then add them to the butter mixture. Stir until well combined, then finally add the fresh milk.

Rest the Dough: Put the dough in the refrigerator and rest for 1 hour until the dough texture is slightly hard and easy to shape.

Shaping and Baking: Weigh out 20g of dough, shape into balls, and arrange on a baking sheet. Bake at 160°C for about 15 minutes, or until golden brown.
