Tom-Kha Gai is a rich Thai soup known for its unique combination of savory, sour and spicy flavors resulting from a blend of traditional spices such as lemongrass, lime leaves and galangal. This soup generally uses coconut milk as the main ingredient to create a smooth creamy texture. In this recipe, we bring a modern twist by replacing the coconut milk with Oatly Barista, which provides a similar creaminess but with a lighter flavor.

For added enjoyment, Tom-Kha Gai is served with Chef Daniel Spaghetti and whole mushroom, bringing a rich texture and delicious flavor to every bite. The savory soup combined with sliced chicken, meatballs, and fresh cherry tomatoes make this dish perfect for anytime. The garnish of micro greens on top adds a fresh impression and enhances the appearance, making Tom-Kha Gai Oatly Noodle Soup a unique and indulgent fusion dish choice.

Ingredients:

  • 70 gr sliced chicken
  • 3 pcs favorite meatballs
  • 1 lemongrass leaf
  • 3 orange leaves
  • 2 slices galangal leaves
  • 50 gr Chef Daniel Whole Mushroom
  • 150 gr onion
  • 4 pcs cherry tomato
  • 2 pcs merch chili
  • 250 ml Chef Daniel Mushroom Bouillon
  • 200 ml Oatly Barista
  • 5 gr salt
  • 3 gr ground pepper
  • 15 g lemon juice
  • 60 gr Chef Daniel Spaghetti (eaten at serving time)
  • Micro greens for garnish

How to make:

  1. Heat the pot, then pour Chef Daniel Mushroom Bouillon 250 ml.
  2. Add 70 gr chicken slices and 3 pcs favorite meatballs, stir briefly until the chicken starts to change color.
  3. Add lemongrass leaves, lime leaves, and galangal leaves to the pot to give it a Thai aroma.
  4. Add Chef Daniel Whole Mushroom 50 g, onion 150 g, cherry tomato 4 pcs, and chili merch 2 pcs. Stir gently until all ingredients are combined.
  5. Pour Oatly Barista 200 ml into the pot, stir until the soup is creamy and evenly distributed.
  6. Add 5 g salt, 3 g ground pepper, and 15 g lemon juice for a fresh sour taste. Stir again until all ingredients are well mixed and cooked.
  7. In a serving bowl, arrange the 60g Chef Daniel Spaghetti that has been boiled before.
  8. Arrange the meatballs, chicken and mushrooms from the pot on top of the spaghetti.
  9. Pour the Tom-Kha Gai soup into the bowl until all ingredients are submerged.
  10. Add micro greens on top for a fresh look.
  11. Tom-Kha Gai Oatly Noodle Soup is ready to serve!
