Arla Choussant Banana Cheese is a unique pastry creation that combines the softness of choux pastry with the typical croissant layering technique, resulting in a crispy texture on the outside yet remaining soft on the inside. This dish combines the natural sweetness of grilled plantain with the savory touch of Arla Pizza Topping Stick cheese and the luxury of premium butter, creating a modern and mouth-watering sweet-savory combination.

INGREDIENTS

 

120 g Arla Pro Unsalted Butter

200 ml Arla Full Cream UHT Organic Milk

2 g Arla Pizza Topping Sticks

10 g Salt

225 g Granulated Sugar

100 g Wheat Flour

125 g Egg

1 comb Laminated Butter

500 g Plantain

 

HOW TO MAKE

Banana Preparation: Peel the bananas thoroughly, cut them into long squares, and arrange them in a baking dish. Bake in an oven at 180°C for 15 minutes. Remove from heat and let cool.

Making the Basic Dough: In a heatproof bowl, combine Arla Pro Unsalted Butter, Arla Full Cream Organic UHT Milk, salt, and sugar. Cook over medium heat until boiling.

Mixing the Flour: Add the flour and stir until evenly distributed. Remove from heat and pour into a mixing bowl, then beat with a paddle until the steam dissipates.

Adding the Eggs & Cooling: Add the eggs one at a time, stirring again until well combined. Remove the dough, place it in a plastic bag, flatten it, and refrigerate for 15 minutes.

Lamination Process: After 15 minutes, remove the dough and roll it out until flat. Place the prepared laminated Arla Pro Unsalted Butter into the center of the dough.

First Fold: Roll out the dough lengthwise, then double fold once. Return to the freezer for 10 minutes.

Second Fold: After 10 minutes, roll out the dough lengthwise again, then double fold twice. Return to the freezer for another 10 minutes.

Shaping & Baking: Roll out the dough lengthwise, then cut into rectangles as needed. Place on a deep baking sheet and bake for 30 minutes. Remove and let cool.

Finishing: Take the prepared chousant crust, layer with bananas, and add Arla Pizza Topping Sticks. Bake for another 10 minutes.
