Lapis Legit, often called Spekkoek, is a premium Indonesian cake influenced by Dutch cuisine. It's renowned for its meticulous baking process, where the dough is baked layer by layer (usually 18 or more) to create a beautiful browned pattern when cut. Its texture is dense yet soft and moist, with a fragrant aroma of spekkoek spices and a rich, rich flavor derived from the generous use of egg yolks and butter.

INGREDIENTS

 

550 g Bunge FlexiBetter 3020 (bulk)

100 g Sweetened Condensed Milk

4 g Spekoek Seasoning

864 g Egg Yolks (approximately 48 eggs)

375 g Granulated Sugar

40 g Low-Protein Flour

60 g Powdered Milk

8 g Vanilla Extract

1 g Salt

 

HOW TO MAKE

Beating the Fat: In a separate bowl, beat the Bunge FlexiBetter 3020, spekoek seasoning, and sweetened condensed milk until smooth, white, and light. Set aside.

Beating the Eggs: In another bowl, beat the egg yolks, granulated sugar, and vanilla extract until stiff peaks form. Set aside.

Mixing the Dough: Gradually add the beaten butter mixture (FlexiBetter) into the egg yolk mixture, then mix until evenly combined.

Adding Dry Ingredients: Add the flour and powdered milk to the batter. Gently stir in the batter using a spatula. Be sure not to overmix to maintain the texture.

Baking Process: *Prepare a 20x20x6 cm baking pan. Weigh out 70-80 grams of dough per layer.

Bake layer by layer until the dough is used up and forms a beautiful layer.
