Pia Crust Ingredients

Dough A

300 g Medium-protein flour

125 g Unsalted Arla Butter

125 ml Cold Water

½ tsp Salt

10 g Granulated Sugar

 

Dough B

200 g Medium-protein flour

125 g Unsalted Arla Butter

 

Filling Ingredients

40 g Unsalted Arla Butter (for sautéing)

200 g Chicken (diced, boiled until half-cooked)

300 g Potatoes (diced)

500 g Chef Daniels Mixed Vegetables

20 g Garlic (sliced) or 6 g Garlic Powder

20 g Shallots (sliced)

100 g Onions (diced)

2 packs Warasa Japanese Curry Paste (total 80 g)

200 g Arla Pro Pizza Topping (Mozzarella)

Seasoning: 15 g Granulated Sugar, 4 g Salt, 2 g Ground pepper, 10 gr Powdered stock.

Making Arla Chicken Filling

Heat Arla Unsalted Butter, sauté all the onions (red, white, and green) until softened.

Add the chicken and cook until it changes color.

Add the potatoes, mixed vegetables, curry paste, and all the spices. Cook until evenly coated and cooked through. Set aside.

 

Making Fried Pia Skin

Dough A: Mix all ingredients, knead until smooth and can be shaped into balls. Wrap in plastic wrap and let rest for 15 minutes.

Dough B: Mix all ingredients, knead until smooth and can be shaped into balls. Wrap in plastic wrap and let rest for 15 minutes.

Division: Divide dough A and B into 4 portions each. Roll into balls.

Layering: Flatten one portion of dough A, place dough B inside, wrap tightly, and roll again. Repeat until finished.

Formation: Roll out the dough until it is long and thin, then roll it up. Roll it out again lengthwise once, roll it up again, and trim the edges.

Filling: Cut the rolled dough (not too thin). Flatten it and add the chicken curry filling and Arla Pro Pizza Topping. Twist the edges like a pastel/curry puff.

 

Frying

Heat enough cooking oil.

Fry over medium heat, turning frequently, until golden brown.
